Quinoa Burgers

Veggie & Rice Stir-fry 

1/2 c. brown rice (soaked prior if possible

1 c. broccoli florets

1 c. summer squash, chopped

1 handful green beans

2 tsp olive oil

2 tbsp tamari

variety of spices/seasonings (black pepper, garlic, herbamere)

squirt of saracha sauce

1. Cook brown rice in a pot according to the directions on the box/bag/etc. – I cook it in water or homemade veggie broth (totally up to you what you use)

2. While the brown rice is cooking (towards the middle), add 2 tsp of olive oil to a pan.  Heat the oil for a little bit then add all of the veggies.  Let the veggies simmer, stirring them around so they are cooked equally on all sides.  Towards the end of cooking the veggies, let them simmer in some tamari sauce and spices (of your choice – listed above are what I used).

3. Lay the rice over a plate, creating a bed for the veggies.  Add the veggies on top with a squirt of saracha sauce to top it all off – voila!
